Guiglielmo Zito has a number of small holdings across Puglia, concentrated around the Valle d'Itria, close to Martina Franca. He works with a range of rare native varietals such as Verdeca, Susumaniello, Bianco d'Alessio, and others. Many of these grapes were close to extinction and only survived the 20th century due to the Vermouth trade, but are now back producing quality still wines. From higher altitude plots, he trains vines high off the ground to increase air flow therefore cooling the grapes and lowering potential alcohol. The result is wines full of Puglian character that also retain freshness.
